Stuffed Cherry Tomato Appetizer

Cilantro adds zest to this quick and easy 15 minute appetizer

Yield: Serves 4

Ingredients

2 cups cherry tomatoes
2/3 cup low-fat cottage cheese
2 scallions, minced
1 tablespoon fresh cilantro, minced
1 tablespoon fresh parsley, minced
1 tablespoon fresh basil, minced
1 clove garlic, minced
Dash of curry powder

Directions:

Cut tops off cherry tomatoes almost through, forming a lid. Scoop out the seeds and discard.

Mix together cottage cheese, scallions, cilantro, parsley and garlic. Add basil and curry; stir well.

Stuff tomatoes with the cheese mixture. The tops should be partly open.

Note: Makes an attractive presentation when displayed on a bed of cilantro leaves.

When selecting cilantro, look for fresh, undamaged bunches with small stems.
